Bringing in the Holiday Spirit with the Radio City Christmas Spectacular

rockettes

Christmas in New York City is something everyone should experience once in their life.  From ice skating at Central Park,  Rockefeller Center or Bryant Park to the gorgeous Holiday windows and tree-lighting at Rockefeller Center to Santa at Macy’s Herald Square and even Salvation Army Santas on every corner or chestnuts roasting on street carts, it is a beauty to behold.  The city, if even possible, becomes even more energetic.  The holiday spirit is palpable. A Christmas holiday tradition for many, and one not to be missed, is the Radio City Christmas Spectacular.  Would you believe that I have never gone?! […]

Reflecting Back While Moving Forward : Celebrating the 2nd Birthday of Our Second Child.

The path on which we grew into a family of four was not the easiest of journeys to be on. For starters, I was ready for a second child much sooner than my husband was and while we were both thrilled at the sight of that positive pregnancy test I think the fact that it happened right away threw us both for a loop. We had compromised on a minimal 2.5 year age difference between our first child and second child but considering that it didn’t happen right away the first time, we agreed we’d begin trying when our eldest turned two.  Just […]

About Ellie Beatus

After spending the bulk of my childhood in New Jersey, I've had the privilege of living in many different places all over the world. I have experienced many incredible things in my life, but none as amazing as when I become a mom. I may work as a full time registered nurse, but I am also a full time mother. I believe that there is nothing more important in the world than my family, and I cherish every moment spent with them. I hope to be able enrich my children's lives by sharing in wonderful experiences, teaching them life lessons, and nurturing them as they grow and help to make the world a better place for all of us. (Ellie currently resides in Long island, NY with her two young sons and husband)

RECIPE: Berry Marscapone Bruschetta #SpuntinoWestbury

Spuntino_Stawberry

One of my new favorite restaurants is Spuntino’s Wine & Tapas Bar in Westbury.  If you’ve been following me on Instagram or Twitter, you know I am there ALL the time. I was super sad on a recent visit to know that they had taken down the Strawberry Marscapone Bruschetta off the menu.  Off course, it’s a seasonal item but that was one of my favorites!  I was obsessed with it. Luckily I was able to easily recreate the recipe, and although it wasn’t 100% the same, it comes close and will definitely hold me over until next summer. Your […]

The Ultimate #GameChanger from @Britax

Britax Convertible

Why is it that we often feel like we need an Ivy League degree in engineering to figure out buying and installing car seats for our kids? It seems as though we never really know if the seat is secure enough, or whether or not the seat is installed properly. We can never easily figure out where the seat belts go, or if the LATCH system is providing the proper amount of security. Most importantly, many first time parents don’t even know if they even have a LATCH system and/or does the car accommodate this? There are so many choices […]
