Since I don’t drink, to me, Cinco de Mayo is synonymous with guacamole and most recently I have been obsessed with a twist on this classic recipe that I tasted at a recent stay at Disney’s Coronado Springs Resort. The south-west American themed resort with a distinct Mexican flair served up an amazing guacamole I couldn’t get enough of and I’m serving up 2 versions of this recipe, which while isn’t exact, gives nod to the Rix Lounge staple. The addition of pomegranate is… EVERYTHING.
Handmade Pomegranate Guacamole
- 3 Haas avocados
- pomegranate seeds
- 1 lemon
- salt, to taste (approximately 1/2 teaspoon)
- 1/2 medium onion
- 2 tomatoes
- 1 clove garlic, minced
In a bowl, mash the 3 avocados (already halved, pitted and scooped out) to your desired consistency. Juice the lemon and mix into the mashed avocado. Dice the onion, tomatoes and garlic to the consistency you like. If you like a chunky guacamole dice, if you like a very fine flavoring I like using a Chopper to mince the onion and garlic. Fold in the onion, tomatoes and garlic. Season with salt to taste. Sprinkle generously pomegranate seeds.
